The cool and refreshing texture of Lassi after breakfast, lunch, or really any time of the day is always a winner. Lassi is simply the name of the beverage, so many of the variations in English will simply be written as ‘salty Lassi,’ or ‘sweet Lassi,’ or a fruit concoction with mango.
The style most Pakistani Lassi makers employ involves making the beverage from scratch. Very unique to behold each cup of milk transform from cream or even butter as the chef churns it all by hand. Some can be extremely rudimentary, made with nothing but yoghurt, sugar and ice water; or others include layer upon layer of ingenious flavours and combinations. It is served best in steel glasses that magnify the essence of the beverage.
